…it can’t be good for you. Or can it?

Do an online search for “sweet potato fries” and yes, you get a ton of recipes for home cooks on how to make fries like they had at your restaurant. But what you also get are tons of articles aimed at diabetics, paleo fanatics, and even arthritis or cancer sufferers. Why? Because this vegetable we’re so passionate about is one of the healthiest foods out there. The awesome folks at the North Carolina Sweet Potato Association summed it up like this:

  • Vision: Sweet potatoes are great for your vision because they are rich in Vitamin A.
  • Cancer fighting: Sweet potatoes are a cancer fighting food due to it’s Vitamin A and C, both powerful antioxidants that works to remove free radicals (chemicals that damage cells) in the body
  • Digestion: Sweet potatoes are a good source of fiber which promotes healthy digestion and prevents colon cancer.
  • Diabetic-friendly: Sweet potatoes are great for diabetics because they help stabilize blood sugar levels and are low on the glycemic index
  • Energizing: Sweet potatoes are a rich source of energy due to it’s supply of complex carbohydrates
  • Anit-inflammatory: Vitamins A and C are anti-inflammatory nutrients, making sweet potatoes an excellent food choice for those suffering from arthritis or asthma

What’s really amazing is that in spite of all these sweet potato health benefits, adults and kids of all walks of life LOVE to eat ‘em. Because they don’t have that “healthy food” stigma — they’re delicious, not dull.

To hang on to as many of these benefits as possible, you need to love this orange root so much that you produce a clean, nutritionally preserved fry (or puree, or tot, etc.) by building your process around the sweet potato and only the sweet potato. That’s true love.
